Рыболовы очень редко ловят вьюнов, но в Японии их специально разводят на продажу из-за отличных вкусовых качеств мяса этих рыбок. Оно жирное, питательное, нежное и даже немного сладковатое. Многие гурманы считают его деликатесом, правда, если мясо приготовлено правильно, иначе оно будет отдавать тиной и в этом повинна слизь, которая смывается с рыб с большим трудом. Избавиться от запаха можно, подержав пойманных рыбок 2–3 часа в проточной воде и обмыв водкой.

Другой способ снять слизь с рыб – золой. Делается это так. Очищенного от чешуи вьюна потрошат и натирают сухой золой, а затем тщательно моют водой и выдерживают перед готовкой около часа в соленой воде. Голову и хвост всегда отрезают.
