Судак фаршированный заливной. Тушку некрупного судака (до 1,5 кг) очищают от чешуи, вырезают и удаляют спинные плавники и хребтовую часть. Потрошат, не вырезая брюшко. Реберные кости подрезают и удаляют, отрубают брюшные плавники. Тушку промывают. Срезают мякоть, оставляя ее на коже слоем 0,5 см. Мякоть используют на фарш. Мякоти одной тушки обычно не хватает для фарша, поэтому нужно добавить от еще одного судака.

Для приготовления фарша филе судака (без кожи и костей) вместе с пассерованным репчатым луком и замоченным в молоке белым хлебом без корок (а лучше сырок, слоеное тесто) пропускают 3-4 раза через мясорубку с паштетной решеткой.
